Description of Work

This position will serve as assistant manager in the meat lab. The primary focus of this person will be to market meat products in the meat lab. Responsibilities would include providing leadership in meat sales by managing product inventory, assisting in fabrication and preparation of products for sale, quality assurance, coordinate staffing of meat sales, marketing, and advertising. Other responsibilities will include assisting meat lab manager in harvesting animals, personnel training and management of student labor in meat sales. The candidate will also fill in as meat lab manager occasionally with collection of the HACCP records such as pre-operational inspection, operational inspection and other records.

Minimum Required Qualifications

Bachelor’s degree in Animal Science – Meat Science/Food Science plus three (3) years’ experience in fabrication and food/meat processing; equivalent education/experience will be considered. Work independently to prioritize and organize the movement of product through the meat sales facility, supervise student employees in the preparation stocking and managing meat sales. Record keeping and computer skills and have the ability to supervise employees. Understanding of the HACCP compliance and standard operating procedures. Demonstrate the ability to teach/train others. Technical skills to operate a meat processing establishment (fabrication, processing and packaging of meat products)

Preferred Qualifications

Ideal candidate will have Master’s degree in Animal Science – Meat Science/Food Science. Professional marketing and inventory management experience. Additional experience in the HACCP regulations and record keeping is preferred. Must be able to obtain HACCP training with first 6 months of employment. SOP’s and safety training must also be obtained in same time frame.
